Ingredients
  

For the Cake:

  • 2 cups almond flour
  • 2 cups gluten-free all-purpose flour such as King Arthur brand
  • cups granulated sugar or coconut sugar for a healthier option
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups almond milk or any plant-based milk of your choice
  • 2 teaspoons apple cider vinegar
  • tablespoons pure vanilla extract

For the Simple Vanilla Icing:

  • 2 tablespoons softened vegan butter optional; omit if you prefer oil-free
  • 3 cups powdered sugar
  • 2 to 3 tablespoons almond milk
  • 1 teaspoon pure vanilla extract
  • Sprinkles optional, for decoration

Instructions
 

  • Preheat the Oven
  • Set your oven to 350°F (175°C). Lightly grease two 8-inch round cake pans and line the bottoms with parchment paper to ensure easy removal after baking.
  • Prepare Dry Ingredients
  • In a large mixing bowl, whisk together the almond flour, gluten-free all-purpose flour, sugar, baking powder, and salt. Make sure the ingredients are well combined for an even texture.
  • Add Wet Ingredients
  • Pour in the almond milk, apple cider vinegar, and vanilla extract. Stir gently until the ingredients are just combined. Be careful not to overmix, as this can affect the texture of the cake.
  • Bake the Cake
  • Divide the batter evenly between the two prepared cake pans. Place them in the preheated oven and bake for 30 to 35 minutes. To test for doneness, insert a toothpick into the center of the cakes. If it comes out clean, the cakes are ready.
  • Cool the Cakes
  • Allow the cakes to cool completely in the pans. Once cooled, carefully remove them from the pans and place them on a wire rack to cool further.
  • Prepare the Icing
  • In a medium bowl, mix the softened vegan butter (if using), powdered sugar, almond milk, and vanilla extract. Stir until smooth, adjusting the consistency with more milk or powdered sugar if needed.
  • Assemble the Cake
  • Once the cakes are completely cool, spread a layer of icing evenly on the top of one cake. Place the second cake on top and frost the entire cake. If desired, decorate with sprinkles for a festive touch.
