- 3 Tbsp extra virgin olive oil divided
- 3 lb boneless chuck roast
- 1 tsp fine sea salt
- 1 tsp freshly ground black pepper
- 3 lb yellow onions sliced thin
- 2 cloves garlic finely chopped
- 1 Tbsp pure maple syrup
- 1 Tbsp all-purpose flour
- 1 cup beef stock used in place of red wine to avoid alcohol; add 1 Tbsp balsamic vinegar for acidity
- 2.5 cups beef stock
- 1 sprig fresh rosemary
- 1 bay leaf bay leaf
Season the chuck roast with salt and pepper. Heat 1 tablespoon of olive oil in a skillet and sear the beef on all sides until browned, about 12 minutes. Transfer to the slow cooker.
Add remaining olive oil and sliced onions to the skillet. Cook 5 minutes on medium heat, then reduce to medium-low and cook another 20 minutes until lightly golden.
Add garlic and maple syrup; cook 7–8 minutes. Stir in flour to coat the onions.
Deglaze the skillet with 1 cup beef stock and 1 tablespoon balsamic vinegar (alcohol-free replacement). Add remaining beef stock and stir to combine.
Pour the onion mixture over the roast in the slow cooker. Add rosemary and bay leaf.
Cover and cook on LOW for 8 hours until the meat is tender and shreddable.
Remove herb stems and bay leaf, shred the beef, and serve warm with the onion gravy.
