Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs about 12 crackers
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter melted

Cheesecake Filling

  • 2 cups cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream

Strawberry Topping

  • 2 cups fresh strawberries hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions
 

  • Serve: When ready to serve, cut into squares or bars and enjoy!
  • Prepare the Cheesecake Filling: In a large bowl beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, continuing to beat until combined. In a separate bowl whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until smooth. Spread the cheesecake filling evenly over the chilled crust
  • Make the Strawberry Topping: In a small saucepan combine chopped strawberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally, until strawberries release juices and the mixture becomes syrupy (about 5–7 minutes). Remove from heat and let cool to room temperature.
  • Assemble & Chill: Once the topping has cooled, spoon it evenly over the cheesecake layer. Refrigerate the bars for at least 4 hours or preferably overnight to allow the layers to set.
  • Serve: When ready to serve, cut into squares or bars and enjoy!
