Casserole Base
- 1 can (16.3 oz) refrigerated biscuit dough large biscuits preferred
- 1 lb turkey sausage substitute for pork sausage
Egg & Gravy Mixture
- 6 large eggs
- 1/2 cup milk whole or 2%
- 1 package (2.75 oz) peppered gravy mix
- 1 pinch salt and black pepper
Finishing Touch
- 1 cup shredded cheese Cheddar, Colby Jack, or blend
Preheat your oven to 350°F (175°C) and grease a 13x9 inch baking dish.
Cook the turkey sausage in a skillet over medium-high heat until browned, breaking it apart as it cooks.
Drain the sausage thoroughly to prevent the casserole from becoming greasy.
Cut each biscuit into 6–8 pieces and scatter them evenly across the bottom of the baking dish.
Layer the drained sausage over the biscuits, then sprinkle the shredded cheese evenly on top.
Whisk together the eggs, milk, salt, and pepper, then pour evenly over the biscuit and sausage mixture.
Prepare the gravy according to package instructions.
Pour the prepared gravy over the casserole, covering as much of the top as possible.
Bake for 35–45 minutes, or until the center is set and the top is golden and bubbling.
Let rest 5–10 minutes before slicing and serving.
For variation, add hash browns as the bottom layer, try spicy chorizo-style plant-based sausage, or swap biscuits for crescent roll dough. Make ahead by assembling the casserole the night before and refrigerating until baking.
