Instructions
Line a 12-cup muffin pan with muffin liners.
Sprinkle about 2 teaspoons of granola into the bottom of each cup to form a base.
In a medium bowl, add the yogurt and diced strawberries. Stir until the fruit is mixed throughout the yogurt.
Spoon approximately 2 tablespoons of the yogurt and strawberry mixture into each prepared muffin cup over the granola layer.
Press a few extra pieces of diced strawberry into the top of each cup for garnish.
Sprinkle additional granola on top if desired.
Place the pan into the freezer and chill until the bites are firm, about 2–4 hours.
Once firm, pop out each bite and enjoy straight from the freezer or let soften for a few minutes before eating.
Notes
Store leftover bites in a freezer-safe container for up to 1–2 months. Let sit at room temperature for 5–15 minutes before serving for easier eating.
