Ingredients
  

Yogurt Mixture

  • 1 cup vanilla yogurt your choice of vanilla or plain yogurt
  • 1/2 cup fresh strawberries hulled and diced

Granola

  • 1/2 cup granola plus extra for topping

Instructions
 

  • Line a 12-cup muffin pan with muffin liners.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup to form a base.
  • In a medium bowl, add the yogurt and diced strawberries. Stir until the fruit is mixed throughout the yogurt.
  • Spoon approximately 2 tablespoons of the yogurt and strawberry mixture into each prepared muffin cup over the granola layer.
  • Press a few extra pieces of diced strawberry into the top of each cup for garnish.
  • Sprinkle additional granola on top if desired.
  • Place the pan into the freezer and chill until the bites are firm, about 2–4 hours.
  • Once firm, pop out each bite and enjoy straight from the freezer or let soften for a few minutes before eating.

Notes

Store leftover bites in a freezer-safe container for up to 1–2 months. Let sit at room temperature for 5–15 minutes before serving for easier eating.
